Light refreshing raita with cucumbers and mint! An ideal addition to fried and baked dishes!
Raita is an Indian dish that resembles a cross between a salad and a gravy. I really like the expression “calms the receptors” in relation to this dish, there is something in that. The cucumber raita complemented my favorite buckwheat and potato patties perfectly, actually adding juiciness and freshness! I believe that this dish will definitely be a success during the hot season. I took a strong mint, menthol. You can use sour cream instead of yogurt.
Ингредиенты
Yogurt - 200 g
Fresh cucumbers - 170 g
Mint - 10 g
Salt - to taste
Ground black pepper - to taste
Lemon zest - 1 tsp.
Рецепт
1. Cucumbers must be washed, cut off the ends and grated on a fine grater. Squeeze the juice from the chopped cucumbers.
2. Wash the mint thoroughly and chop it very finely, especially the stems. It is better to remove very tough stems.
3. Add yogurt, salt, ground black pepper and lemon zest.
4. Stir until as smooth as possible.
5. Cucumber raita is ready. It must be served chilled.
