I used zucchini, juicy tomatoes, sweet peppers, carrots and onions. They go well with millet porridge. You can always diversify the dish by replacing zucchini and tomatoes, adding cauliflower, some potatoes or broccoli instead. Also, if desired, add pieces of chicken to the vegetables to make the porridge more nutritious and satisfying. With vegetables, the dish turns out to be dietary and vegetarian, which is very popular now.

Millet - 150 g

Tomatoes - 80 g

Onions - 60 g

Carrot - 60 g

Zucchini - 80 g

Bell pepper - 50 g

Vegetable oil - 40 g

Water - 350 g

Salt, black pepper - to taste

1. Rinse all the vegetables, cut off the stems from the zucchini, peel the carrots, onions and bell peppers. Cut tomatoes and zucchini into medium cubes. It’s better to use young zucchini - you won’t need to cut off the skin from them, and you won’t have to peel the seeds. Tender young zucchini is an excellent solution for any dish.

2. Chop the onions and carrots. Chop the onion into small cubes, and the carrots into small rings or quarter rings if the carrot is large. Cut the sweet pepper into small cubes.

3. Pour oil into the bottom of the pan and turn on medium heat. Add onions, carrots and peppers to the pan. Sauté for 2-3 minutes until the onion is translucent and the carrots and peppers have softened. Stir.

4. Then add zucchini and juicy tomatoes to the pan. Salt and pepper all the vegetables. I used classic spices, but you can add any set of spices you like, for example, Provençal herbs or savory.

5. Cover the pan with a lid and simmer the vegetables for 10-12 minutes over low heat until the zucchini becomes soft. Tomatoes and onions will release juice; do not add water yet.

6. Add washed millet cereal to the vegetables.

7. Pour in the clean water required for the porridge (300-350 g) and wait until the liquid boils. Add salt to taste. Then reduce the heat, cover the pan with a lid and simmer the millet porridge with vegetables for 15-17 minutes.

8. Time passed, the porridge steamed, increased in volume and became completely ready. Stir and you can serve the millet with vegetables.
