Honey mushroom caviar with garlic for the winter

Mushrooms instead of meat? Great! I thought there were no seasons that were too fruitful, but no.
This year, nature decided to bore us with its gifts: we picked berries in buckets, and carried mushrooms in huge baskets. They have already stopped collecting edible “whatever” and switched to honey mushrooms alone. Oh, how delicious homemade caviar is from honey mushrooms with garlic for the winter! The recipe for homemade mushroom caviar cannot but be included in a mushroom picker’s collection. Small mushrooms are used for pickling, but large ones or stems are better used for caviar.
According to my recipe, whole mushrooms are used for caviar, but it is allowed to use only mushroom legs. Also, to prepare mushroom caviar from honey mushrooms with garlic for the winter you will need: onions, garlic, oil for frying (I used olive oil), salt and vinegar for rolling.

Honey mushrooms - 2 kg
Garlic - 3-5 cloves
Onions - to taste
Olive oil - for frying
Salt - to taste
Vinegar 70% - 1/3 tsp.
Bay leaf - for aroma

1. Before frying the caviar, honey mushrooms are cleared of leaves and soil. Wash with running water or in a basin, but without soaking. Their hats are quite fragile.
2. Pure honey mushrooms are boiled in salted water until half cooked. Pre-cooking time is 10-15 minutes.
3. After which the “varenochki” are washed.
4. Passed through a meat grinder.
5. Onions and garlic must also be prepared for twisting: peeled and cut into pieces.
6. Pass into mushroom mince.
7. Next, you must first simmer the minced mushrooms and onions until the moisture evaporates, and then fry until done with the addition of oil (a couple of minutes before the end, you can add vinegar diluted in a tablespoon of water). If you salt the mushrooms thoroughly when cooking, then you will no longer need salt during the frying process. For aroma, honey mushroom caviar can be seasoned with bay leaves.
8. I can't wait to take a sample. I’ll spread a layer of homemade honey mushroom caviar on a slice of white bread, with sweet tea. Yummy!
9. You can store mushroom caviar in rolled up jars with vinegar or in closed jars - in the freezer, but without vinegar. Mushroom caviar from honey mushrooms with garlic is ready for the winter. Bon appetit!
