There are many different types of edible mushrooms in our forests. Mushrooms are a very valuable food product, as they contain proteins, fats, sugars, various mineral salts and vitamins.
Honey mushrooms are one of the most popular mushrooms among the population. They grow, as a rule, on stumps and dead wood, almost always in large families. Along with porcini mushrooms and champignons, honey mushrooms contain a whole complex of microelements and vitamins. Honey mushrooms contain zinc, calcium, iron and phosphorus, vitamins B and PP and vitamin C (more than in blueberries).
Let's sort honey mushrooms into large, medium and small. You can make caviar from large mushrooms, and to prepare pickled honey mushrooms for the winter, use medium and small mushrooms.

Honey mushrooms - 900 g
Water - 1 l
Marinade:
Water - 1200 ml
Salt (ordinary, not iodized) - 40 g
Sugar - 15 g
Bay leaf - 2 pcs.
Cloves - 6 pcs.
Black pepper (peas) - 6 pcs.
Acetic acid 70% - 1 tsp.

1. Wash honey mushrooms under running water. Shorten the legs of honey mushrooms. Pour 1 liter of water into a saucepan. When it starts to boil, pour honey mushrooms into the water, bring to a boil, reduce heat and cook for 10 minutes from the moment of boiling. Don't forget to remove foam when cooking.
2. Drain the water, rinse the mushrooms with water and place in a colander.
3. For the marinade, put a pan of water on the fire, bring to a boil, add mushrooms.
4. You can leave the mushrooms in the marinade until they cool, or you can put them straight into cooled, sterilized jars. Before spreading the honey mushrooms, taste the marinade to make sure you haven’t made a mistake with the amount of acetic acid, and if necessary, add more.
5. Honey mushrooms in the jar must be completely covered with marinade. If you are preparing mushrooms not for long-term storage, then close the jars with boiled screw caps. For longer storage, close the jars with boiled nylon lids. Pickled honey mushrooms are ready for the winter. They need to be stored in the refrigerator or cellar.
