Strawberry puree for the winter can be created in the midst of picking ripe strawberries - they are sold en masse in markets or in stores and supermarkets.
Juicy strawberry puree is prepared in several ways (at least this is how I do it) to preserve a piece of summer until winter. In fact, by offering freezing and canning, I am “killing two birds with one stone” - in winter, due to bad weather, the electricity may be turned off for several days and then all the frozen food in the freezer will disappear, but canning will remain. Canning can also fail, but the strawberry puree will remain frozen in the freezer! In any case, you will enjoy strawberry dessert in winter, so we will create two options at once, since it is not at all difficult and takes little time.

Strawberries - 1 kg
Sugar - 250 g

1. Remove the stems from each strawberry, rinse each berry in water, simultaneously removing unedible specimens.
2. Place them in a blender or food processor bowl.
3. Puree at maximum speed for about 3-5 minutes, you can use the pulsation mode.
4. Pour half of the prepared puree into a container and place in the freezer for 1-2 hours. You can add sugar if you wish, but about 20% of the sweetness is lost when frozen, so I recommend freezing pure, unsweetened puree, and adding sugar to it after defrosting.
5. Pour the rest of the puree into a saucepan or saucepan, add granulated sugar and place the container on the stove. According to the ratio, 0.4-0.5 liters of strawberry mass account for 0.25 kg of granulated sugar.
6. Bring to a boil, reduce heat and simmer for about 15 minutes, covering lightly with a lid to avoid splashing.
7. Sterilize the jars and lids, pour the boiling strawberry mixture into them up to the shoulders.
8. Immediately seal with hot lids or screw them on. Let the preserves cool and transfer to the pantry.
9. At this point you will have frozen puree in the container. You can remove it, immerse the container in warm water for 1 minute and transfer the puree to a bag. Tie the bag and take it back to the freezer for storage. Thus, you ended up with two batches of strawberry puree for the winter. Enjoy your winter tea party!
