An interesting, popular and very tasty winter snack (preparation) made from pumpkin, onions and sweet peppers.

The purpose of pumpkin caviar is truly universal: it can be used as an independent appetizer, spread on bread, or served as a sauce along with a side dish or meat or fish dish. Ready caviar can be stored in the refrigerator for several days or rolled into sterile jars, and then the tasty snack will be stored for several months.

To prepare pumpkin caviar for the winter, take the following products: vegetables, vegetable oil, salt, spices, tomato.

Ингредиенты

Pumpkin - 300 g

Onions - 1 pc.

Sweet pepper - 1 pc.

Salt - 1/3 tsp.

Vegetable oil - 30 ml

Tomato juice - 100 ml

Garlic - 1-2 cloves

Spices - 0.5 tsp.

Рецепт

1. Wash the pumpkin, cut off the hard skin and cut the vegetable into medium-sized pieces.

2. Place the chopped vegetables in a saucepan, add vegetable oil.

3. Salt the vegetables, add your favorite spices, such as black and red pepper, paprika, turmeric or a mixture of dried herbs. Simmer under a closed lid over low heat for 30 minutes. You can also send the vegetables in a saucepan to the oven and bake at 180 degrees for 20-25 minutes.

4. Peel the garlic cloves and chop finely. Place the garlic in a saucepan, add tomato juice or tomato paste and 100 ml of water. Simmer for another 15 minutes.

5. Puree the stewed vegetables using a blender.

6. Scald the inside of jars for preserving pumpkin caviar for the winter with boiling water or heat in the oven, and also scald the lids. Place pumpkin caviar into jars.

7. Screw on the jars of caviar with sterile lids and wrap until completely cool. Store in a cool place or even in the refrigerator.
