Mazurka cupcake with dried fruits

You can take any set of dried fruits and nuts according to your wishes and capabilities. It is important here that the amount of dough is approximately equal to the amount of dried fruit, not by weight, but by size, then it will be a real “Mazurka”. To bake the Mazurka cake with dried fruits and nuts, prepare everything you need in advance according to the list. Keep the butter at room temperature until it softens. Rinse dried fruits thoroughly and cut into smaller pieces. I have candied pumpkin, light raisins, figs, dates and walnuts. Nuts should be chopped with a knife separately from wet dried fruits.

Ингредиенты

Flour - 300 g

Butter - 200 g

Eggs - 4 pcs. (large)

Sugar - 150 g

Baking powder - 10 g

Vanillin - 0.5 g

Dried fruits and nuts - 380-400 g

Рецепт

1. Beat the butter until white with a mixer, then add sugar and beat everything again.

2. Add the eggs to the butter one at a time, beating the mixture until combined each time.

3. Then add flour with baking powder and vanilla and stir the dough thoroughly. I used 30 g less flour than stated in the recipe.

4. It turns out fluffy, like cream.

5. Add prepared dried fruits and nuts to the dough, stir.

6. Place the dough in a cake pan, having previously lined it with parchment or simply greased it with butter. Place the pan in an oven preheated to 180 degrees and bake for 50 minutes (according to the recipe). My oven took 1 hour and 10 minutes to bake the cake until done, so use your oven as a guide and be sure to test the cake for doneness by piercing it with a skewer. It should come out of the dough dry. If the oven overcooks the bottom or top, use foil to cover the top of the pan or place it under the bottom.

7. Mazurka cupcake with dried fruits is completely ready. Let it cool completely in the mold and only then remove and cut. I cut the cake while it was hot.

8. When hot, the cake is quite crumbly, but when it cools, it becomes denser and cuts better. The surface of the cake can be sprinkled with powdered sugar. Well it turned out very tasty! Have a nice day!
