Georgian kharcho soup is usually prepared from beef with rice, walnuts and dried plums - tkemali. I adapted the recipe and propose today to prepare pork kharcho soup - thick, aromatic, moderately spicy and very tasty.
To prepare kharcho soup with pork, we need water, cilantro or parsley, pork pulp, rice, salt, tomato paste, garlic, hops-suneli seasoning, bay leaves, tomatoes, vegetable oil and onions.
Ингредиенты
Water - 2.5 liters;
Fresh cilantro or parsley - 1 bunch;
Bay leaf - 1 pc;
Onions - 1 piece;
Refined sunflower oil - 30 ml;
Tomatoes - 2 pcs;
Rice - 0.5 cups;
Pork pulp - 450 grams;
Khmeli-suneli mixture - 1 tsp;
Salt - to taste;
Tomato paste - 1 tbsp. l;
Garlic - 2 cloves.

1. Cut the pork into pieces, add water, bring to a boil and skim off the foam. Cook over low heat until the meat is cooked. Finely chop the onion and simmer in butter, then add the onion to the broth. Wash the rice well, add it to the broth and cook for 5 minutes.
2. Scald the tomatoes and remove the skin, then finely chop.
3. Add tomatoes and tomato paste to the soup. Cook for 15 minutes over low heat.
4. Chop the garlic and finely chop the greens.
5. Add bay leaf, garlic, herbs and suneli hops to the soup 5 minutes before it is ready. Salt to taste.
