Mannik is a delicious pie made from available ingredients. I really love creating such baked goods in the summer, when you can use a variety of berries and fruits as filling.

Today I bring to your attention manna with black currants and kefir. The baked goods turn out gorgeous: rosy, aromatic, with an airy, porous crumb and a pleasant berry sourness. It is better to serve this pie cooled with a cup of tea, coffee, compote or milk.

Prepare the necessary ingredients to prepare manna with black currants using kefir. Wash the berries in advance, cut off the branches/tendrils and place in a colander to drain excess liquid.

Ингредиенты

Semolina - 1 cup

Sugar - 1 glass

Wheat flour - 1 cup

Kefir 2.5% - 1 glass

Chicken egg - 2 pcs.

Baking powder - 1 tsp.

Black currant - 100 g

Рецепт

1. In a deep bowl, combine semolina and kefir at room temperature.

2. Stir and leave the mixture for at least 30 minutes to allow the cereal to swell. You can also do this procedure in the evening and leave it in the refrigerator until the morning, covering the bowl with a lid or cling film.

3. After the specified time (when the semolina has already swollen), combine the chicken eggs and granulated sugar in a mixing bowl.

4. Beat with a mixer until fluffy and light.

5. Add semolina soaked in kefir to the egg-sugar mixture and mix gently.

6. Add sifted wheat flour with baking powder.

7. Mix again so that there are no flour lumps.

8. Transfer the dough into a suitable form. I have a silicone one. If you have a metal or ceramic one, grease it with a thin layer of butter or cover it with parchment (I didn’t grease my mold with anything). Distribute blackcurrants evenly over the dough.

9. Bake the pie in a preheated oven for about 40-45 minutes at 180 degrees. Be guided by your oven.

10. Check the readiness of the pie with a wooden skewer. Then transfer to a metal rack and let cool completely.
