Bean soup with cilantro

I associate this soup with Georgian cuisine (cilantro, after all!). Red beans (it’s better to use them than any other) and aromatic, very rich cilantro do their job. It turns out, as they say, tasty and nutritious.
If you want to make cilantro bean soup for lunch, be sure to prepare it the night before by soaking the beans! Well, the next day, prepare all the other products according to the list of ingredients...
Ингредиенты
Red beans - 200 g
Carrots - 1 pc. (90 g)
Onion - 1 pc. (150 g)
Potatoes - 2 pcs. (190 g)
Cilantro - 20 g
Garlic - 3 cloves
Tomato paste - 1 tbsp.
Bay leaf - 1 pc.
Allspice - 10 peas
Salt - to taste
Black pepper - to taste
Water - 1.5-2 l

1. If you want to make cilantro bean soup for lunch, be sure to prepare it the night before by soaking the beans! Well, the next day, prepare all the other products according to the list of ingredients...
2. Pour water over the dry beans and leave for several hours, or better yet, overnight. Pour in more water, as the beans swell very much.
3. Rinse the soaked beans under water and place in a saucepan. Pour in clean water (about 1.5 liters). Bring the water to a boil. Then turn the heat to low and cook the beans for 1-1.5 hours (preferably 1.5).
4. Vegetables must be peeled, washed and cut into pieces. Carrots can be grated. After 1.5 hours, put the onions, carrots and potatoes in the pan. Cook the soup for 20 minutes. At this stage, if the soup seems very thick (as some of the water may have evaporated), you can add a little water. The amount of water depends on how thick you want the soup to be.
5. Then add tomato paste, garlic and cook the soup for another 5 minutes.
6. Next, add salt and pepper to the soup to taste. We also add bay leaf and allspice. Cook for the last 5 minutes and turn off the stove.
7. Add chopped cilantro to the finished soup, mix and let the soup brew a little under the lid.
8. Bean soup with cilantro is ready! When serving, you can additionally garnish with fresh cilantro.
