We prepare kulesh from millet with dried mushrooms. A tasty and filling soup for lunch or dinner. Suitable for fasting people, vegans and vegetarians.

During Lent you always want to diversify your menu with tasty and healthy dishes, today I will offer a recipe for just such a soup. We will prepare millet kulesh in a lean or, if you want, a vegetarian version.

Kulesh is a dish that is most often characterized as a thick soup or stew with millet, which spread to Russian and Belarusian cuisine from Zaporozhye. Kulesh is prepared with lard, cracklings, mushrooms, in meat or vegetable broth with the addition of vegetables. As I wrote above, today we will prepare a Lenten kulesh - with vegetables and dried porcini mushrooms.

To prepare lean millet kulesh, prepare the ingredients according to the list.

Ингредиенты

Millet - 80 g

Dried porcini mushrooms - 40 g

Carrots - 150 g

Onion - 150 g

Potatoes - 150 g

Salt, pepper, bay leaf - to taste

Рецепт

1. Soak mushrooms in hot water for 10-15 minutes.

2. Cut the onion into pieces, grate the carrots. Lightly fry the vegetables in vegetable oil.

3. Boil about 2 liters of water, add salt, add bay leaf and bring to a boil. Then add the washed millet, add the mushrooms cut into pieces and cook for 15 minutes.

4. Then add roasted vegetables and potato cubes to the soup. Cook for another 10-15 minutes until fully cooked.

5. Millet kulesh is ready! Serve the dish hot. You can serve greens and sour cream separately.
