Everyone who has ever visited Soviet restaurants should remember poultry in the capital’s style. It was served almost everywhere and was often made from chicken; turkey was less common. Anything was served as a side dish, but in the summer it was always fresh vegetables, in the winter - several varieties of pickles and very often French fries. The chop according to this recipe turns out very tasty and satisfying, men especially like it.

Prepare the products according to the list. Wash the chicken fillet, dry it, cut off any excess. The bread must be stale, so slice it thinly and leave it to dry for a couple of hours at room temperature.

Chicken fillet - 300 g

White bread - 100 g

Egg - 1 pc.

Milk - 1 tbsp.

Salt - to taste

Pepper, h.m. - taste

Butter - 10 g

1. Cut the fillet into three parts lengthwise, cover with cling film, beat lightly, add salt and pepper.

2. Cut the crusts from the bread, cut the crumb into thin strips, and place in a deep bowl. Beat the egg separately, add a little milk. If the mixture is runny, you can add cornstarch.

3. Bread each chicken cutlet in lezone and bread slices, try to stick more of them onto the fillet.

4. Heat refined lean oil in a frying pan, melt a piece of butter in it, place the chops and fry them over low heat for 5 minutes on each side. Also, according to the rules, poultry can be cooked in the metropolitan style in the oven after a short frying, the main thing is to prevent the crackers from burning.

5. Serve the bird on the table in the capital’s style with fresh or pickled vegetables.
