Liver roll is a satisfying and nutritious snack, in addition, it is very healthy due to the main ingredient, namely beef liver. In addition to the liver, the mass for preparing the roll contains sautéed vegetables; they make the roll more juicy and tender. The filling for the roll will be butter.

The roll turns out to be very beautiful and appetizing when cut, and will easily become the main decoration of the holiday table. Despite its unusual appearance, beef liver roll with butter is prepared very quickly; the recipe contains a small number of operations.

Prepare all products according to the list. Remove the butter from the refrigerator in advance so that it becomes soft.

Beef liver – 500 g

Onion – 1 pc.

Carrots – 1 pc.

Butter – 200 g

Vegetable oil – 1 tbsp.

1. Wash the liver well, remove the thin film, cut off possible veins and blood clots. Cut the liver into large pieces. To make soft liver easier to slice, lightly freeze it in the freezer compartment; it will become firmer. Place the liver in a pan of boiling water. In just a few minutes, a large amount of foam will appear on the surface, which must be removed with a slotted spoon. There is no need to salt the liver during cooking; salt will make it tough. Cook the offal for the next 20 minutes; you should not cook the liver longer. Drain the water and cool the liver until warm.

2. At the same time, cook the vegetables. Remove the onions and carrots from the top layer, chop the carrots into strips using a grater, cut the onions into cubes with a knife. Place the vegetable mixture into a heated oil pan.

3. Saute the carrot and onion shredder over low heat for the next 6-8 minutes, covering the container with a lid. Stir the chopping vegetables periodically with a spatula, avoiding burning. Also cool soft, oil-soaked vegetables a little after sautéing.

4. Place the liver and vegetable mixture while warm in a blender container. It is better to make the bookmark in small portions so that the components are better mixed. With the kitchen machine running at full power, turn the contents of the bowl into a smooth, homogeneous mass. The blender can be replaced with a meat grinder.

5. Next, add 50 g of butter, season the mixture with salt and pepper to taste. Beat the mixture with a blender again, evenly distributing the oil throughout the liver mass.

6. Lay a piece of foil on the work surface, level it, and place the liver mixture on top. Using a spatula, spread it over the surface of the foil, obtaining a rectangular layer no more than 1 centimeter thick.

7. Grease the top of the liver leaf with the rest of the oil and smooth it with a silicone spatula.

8. Roll the workpiece into a tight roll, using foil to help.

9. Wrap the roll on all sides with cling film, place it on the refrigerator shelf for the next 3 hours, maybe longer, then the roll will harden better.

10. Beef liver roll with butter is ready. Cut it into portions and place them on the loaf slices.
