Pilaf with chicken and chickpeas

This is not just pilaf, but a special recipe for its preparation, when the vegetables are not completely fried, but rather lightly sautéed together with chicken fillet, chickpeas and rice. The pilaf is very tasty, light and moderate in calories, I highly recommend it to all adherents of a healthy diet.
Prepare all the necessary ingredients for chicken and chickpea pilaf. Peel the onions and carrots, wash them together with the tomatoes and chicken fillet, dry all the products.
Ингредиенты
Chicken fillet - 250 g
Canned chickpeas - 300 g
Rice - 200 g
Onions - 1 pc.
Carrots - 100 g
Tomato - 100 g
Salt and pepper - to taste
Bay leaf - 1 pc.
Garlic - 4-5 cloves
Vegetable oil - 2 tbsp.
Water - 350 g

1. Heat vegetable oil in a frying pan, fry onions and carrots until soft.
2. Add thinly sliced chicken fillet to the pan and fry for 5 minutes.
3. Peel the tomatoes, cut them into cubes, place them in a frying pan, and fry for another 3 minutes.
4. Rinse canned chickpeas and rice thoroughly under running water and add to the pan.
5. Stir, put the garlic cloves directly in the peel, bay leaf, add salt and pepper to taste, pour in just enough water to lightly cover the ingredients in the pan. As soon as the water boils, reduce the heat to low, cover the pan with a lid and cook for 18-20 minutes, until the water has completely evaporated.
6. After a while, without opening the lid, turn off the stove and let the pilaf brew for another 15 minutes. During this time, the rice will swell as much as possible and become saturated with all the flavors and aromas.
7. Divide the finished pilaf with chicken and chickpeas into portions and serve immediately.
