Bulgur salad with green peas and herbs

A colorful bulgur salad with frozen green peas and herbs is an excellent option for a lean, vegetarian side dish or light dinner that can be prepared without any hassle in the kitchen, since the entire process of actively preparing the dish takes no more than 10 minutes.
Topped with sweet green peas, aromatic fresh mint leaves, coriander, parsley and a little red onion and garlic, the salad is light, nutritious and filling, colorful and appetizing to look at, spicy and pleasantly refreshing to taste. Try it!

Bulgur – 200 g
Water (boiling water) – 400 ml
Green peas (frozen) – 300 g
Garlic – 1 clove
Salad onion – 0.5 pcs. (small size)
Lemon – 0.5 pcs. (juice)
Olive oil – 3 tbsp.
Mint leaves – 4-5 sprigs (to taste)
Coriander/cilantro leaves - 3-4 sprigs
Parsley leaves - 3-4 sprigs
Salt - to taste
Ground black pepper - to taste
Sugar – 1 pinch (optional)
Walnut/almond – 50 g (optional)

1. Measure 1 cup (200 grams) of bulgur into a deep bowl. Add a pinch of salt, 1 tbsp. olive oil and mix everything thoroughly so that the oil covers all the grains of bulgur.
2. Pour in 2 cups (or 400 ml) boiling water, using the same cup in which you poured the bulgur to measure.
3. Cover the container with a plate or lid and leave for 20-30 minutes. Then, if necessary, drain the part of the water that has not been absorbed into the cereal and place the bulgur in a salad bowl. Alternatively, boil the bulgur until soft for 10-15 minutes, strain and cool.
4. In a separate container, combine finely chopped red onion and garlic clove. Add 2 tbsp to the container. lemon juice, mix everything well and let the mixture sit while you prepare the remaining ingredients (or at least 5-10 minutes).
5. Place frozen green peas in boiling water, bring to a boil and cook for 2-3 minutes until soft.
6. Then drain the hot water, plunge the peas into ice water for a few seconds and strain.
7. Place the cooled bulgur and green peas in a salad bowl. Add a mixture of onion, garlic and lemon juice, as well as finely chopped mint, coriander and parsley leaves.
8. Mix everything thoroughly. Add olive oil, salt, ground black pepper, a pinch of sugar and, if necessary, a little more lemon juice to taste.
9. Bulgur salad with green peas and herbs is ready. If desired, the finished salad can be sprinkled with toasted and finely chopped walnuts or almonds.
