Chicken fillet cooked in the oven “under a fur coat” is a simple, but very tasty and effective dish that will help you out both on holidays and on weekdays.
Soaked in a fragrant marinade, wrapped in a delicious “coat” of potatoes and mushrooms, covered with a delicious crust of melted cheese, chicken fillet prepared according to this recipe turns out juicy, tender and incredibly tempting both in appearance and taste. Chicken fillet – 500-600 g
Potatoes – 0.5-0.7 kg
Champignons – 500 g
Onions – 1 pc.
Fresh garlic – 1-2 cloves or dried to taste
Cream – 150-200 ml
Cheese - 100-150 g
Parsley – 0.5 bunch
Wheat flour – 3 pinches
Salt - to taste
Ground black pepper - to taste
Mixture of dried Mediterranean herbs – to taste
Vegetable oil – 2-3 tbsp.
Butter – 1 tbsp. (optional)
Mayonnaise / sour cream – 1 tbsp. (optional)

1. Cut the chicken fillet in half, horizontally. Lightly beat the fillet pieces on both sides to a thickness of approximately 0.5 centimeters.
2. Prepare the marinade. Measure vegetable oil into a bowl, add 1-2 pinches of salt, ground black pepper, dried or fresh finely chopped garlic, dried herbs and 2-3 sprigs of finely chopped parsley. Mix everything well.
3. Brush both sides of the chicken fillet pieces with the prepared marinade and leave at room temperature while you prepare the remaining ingredients.
4. Cover the potatoes with cold water, add 1-2 pinches of salt. Bring water to a boil and boil potatoes until tender. Then drain the hot water, rinse the potatoes with cold water and cool slightly.
5. Then add the chopped mushrooms, increase the heat slightly and fry the mushrooms for another 6-8 minutes until the mushrooms are soft.
6. When the liquid produced by the mushrooms has almost completely evaporated, add ground black pepper, dried herbs and 3 pinches of wheat flour. Stirring, fry the mixture for another 1 minute.
7. Pour in the cream, bring the mixture to a boil and, stirring, simmer over low heat for another 2-3 minutes until the cream thickens. Then turn off the heat, add 2-3 pinches of finely chopped parsley and salt to taste.
8. Place chicken fillet in a baking dish.
9. Place a layer of prepared mushroom mixture on each piece of chicken fillet.
10. Peel the potatoes and grate them using a large mesh grater. Add a layer of grated potato to each fillet piece. Also add a little ground black pepper, 1-2 pinches of salt, and, if desired, a little mayonnaise or sour cream.
11. Sprinkle everything with grated cheese. Place the chicken fillet “under the fur coat” in the oven preheated to 180 degrees and bake for 20-25 minutes until the cheese is browned.
12. Then turn off the heat, leave the dish in the cooling oven for another 5-10 minutes so that it infuses, and then serve.
