Georgian tomatoes are a simple and very tasty homemade preparation that will decorate the winter menu and bring bright colors to it.
Today I want to share with you one of the simplest and most delicious ways to prepare tomatoes for the winter. Let's prepare tomatoes in Georgian style.
Supplemented with a small amount of aromatic herbs, sweet peppers, carrot rings and garlic, tomatoes prepared according to this recipe always turn out very aromatic and tasty. Moderately spicy, sweet and sour, Georgian tomatoes will be an excellent addition to side dishes of potatoes, meat and cereals, as well as a bright appetizer that will decorate your menu both on holidays and on weekdays. Ингредиенты
Tomatoes - as needed
Carrots - 0.5 pcs.
Sweet pepper – 1-2 pcs.
Garlic - 3 cloves
Dill/parsley/celery – 1 sprig each
Water – as needed (approximately 1-1.2 liters)
Sugar – 100 g
Salt – 1 tbsp. (with a slide)
Vinegar 9% - 100 ml.
Bay leaf – 1 pc.
Allspice – 5-6 pcs.

1. To prepare Georgian tomatoes for the winter, prepare the ingredients according to the list.
2. Prepare jars and lids for preservation in advance. Wash the jars of soda and sterilize them in any convenient way (steamed, oven or microwave), boil the lids for 3-5 minutes.
3. Wash and sort the tomatoes. Using a wooden toothpick, pierce the tomatoes 3-4 times around the place where the stem attaches.
4. Prepare the remaining ingredients. Peel the garlic cloves. Cut bell peppers into strips and carrots into slices. Wash the greens.
5. Place herbs, garlic cloves and a few pieces of carrots in prepared jars. Fill the jars with prepared tomatoes and add a few strips of sweet pepper.
6. Fill the jars with boiling water so that the water slightly spills over the rim. To prevent the jars from bursting, pour boiling water in a thin stream, along the edge of a metal spoon. Cover the jars with lids and leave for 5-7 minutes.
7. Then drain the water. Add sugar, salt, vinegar, bay leaf, a few allspice peas and bring the marinade to a boil.
8. Turn off the heat and pour the boiling marinade into the jars of tomatoes. Then close with the prepared lids and roll up.
9. Turn over the jars with the workpiece and wrap it until it cools completely.
10. Georgian tomatoes are ready. Have a delicious winter!
