Risotto with zucchini and chicken

Risotto with chicken and zucchini is a fairly easy-to-prepare dish with a rich taste and aroma; this dish can be an excellent hearty breakfast, lunch or dinner for the whole family. The consistency of the risotto is creamy and incredibly tender, I highly recommend making it.
Take all the necessary ingredients to prepare chicken and zucchini risotto. Peel the onions and carrots, cut off the ends of the zucchini on both sides, wash the vegetables and fillets under running water, pat everything dry. The broth can be used either vegetable or any meat.

Chicken fillet - 250 g
Rice - 180 g
Onion - 50 g
Carrots - 50 g
Zucchini - 1 pc.
Garlic - 1 clove
Butter - 1 tbsp.
Broth - 500 g
Dry white wine - 100 g
Salt and pepper - to taste
Grated Parmesan - 50 g
Vegetable oil - 2 tbsp.

1. Heat vegetable oil in a frying pan, add chopped onions and carrots, fry for 2 minutes over moderate heat.
2. Cut the young zucchini into strips, add to the pan, hold for another minute.
3. Also cut the chicken fillet into thin slices, place in a frying pan, stir and cook for 3-4 minutes.
4. Add risotto-grade rice into the pan.
5. Pour in the wine, stir the contents of the pan and start adding broth little by little. Cook the risotto, stirring constantly. When the broth begins to be absorbed by the grain, add more until the rice is cooked. I cook it for about 15 minutes, because I don’t like al dente doneness.
6. When the rice is at the desired level of doneness, add a crushed clove of garlic and a tablespoon of butter, stir and hold for about another minute over moderate heat, and add pepper.
7. Add grated Parmesan, stir one last time, and only now can the dish be seasoned with salt as needed. If you have saffron, add a pinch.
8. Divide the very tasty and healthy risotto with zucchini and chicken into plates and serve immediately.
9. Don't forget to fish out and discard the garlic before serving. Have a nice one.
