It is in this way that starch is released, which creates the necessary viscosity for gluing the grains together.
To prepare risotto with minced meat, take the ingredients from the list.

Rice - 250 g
Minced chicken - 250 g
Onion - 1 pc.
Carrots - 1 pc.
Garlic - 1-2 cloves
Vegetable oil - 2-3 tbsp.
Cilantro - 5 branches
Salt, pepper - to taste

1. Fry chopped garlic and onion in vegetable oil.
2. Another minute - with diced carrots.
3. Add chicken or other minced meat, stir, soak in oil until white.
4. Add rice, stir, dry for 1-2 minutes.
5. Pour in liquid in small portions (boiling water, broth, dry wine - your choice). Stir in a circle all the time, completely evaporate the moisture. Then add the liquid again, stirring, evaporate, and so on over and over again.
6. At the very end of cooking, add salt and pepper to taste, remove from heat, and throw a handful of chopped cilantro or other fresh herbs into the silky and viscous risotto with minced chicken.
