1. Thoroughly clean the pike perch of scales - they are very small. Walk along the fins - the scales there are often difficult to remove. Cut out the gills, rip open the belly and remove the entrails. Rinse the carcass thoroughly. Wash the tomatoes and cut them into slices. Place half of the vegetable slices on foil or parchment paper on a baking sheet. Dry the fish with paper towels and place on top of the tomato slices. If the carcass is not dried, it will not coat well with sour cream.
2. Salt the carcass inside and out. Grease with sour cream of any fat content and pepper. If desired, you can add other spices and herbs.
3. Peel the carrots, onions and garlic. Cut the carrots into circles, the onion into half rings, and the remaining tomatoes into cubes. Press or finely chop the garlic.
4. Stuff the fish with vegetable slices, place carrot slices and tomato slices on top of the carcass.
5. Cover the pike perch with foil - it will not stick to the skin of the carcass, thanks to the vegetable slices.
6. Preheat the oven and place a baking sheet in it. Bake for about 35-40 minutes at 220 degrees. Then remove the foil and brown the fish for another 10-15 minutes. Check the readiness of the carcass by piercing it with a knife - it should be soft and steamed. Remove the pan from the oven and carefully transfer the fish to a plate. I do this with two wide silicone spatulas.
7. Serve royal-style pike perch hot; you can complement it with various sauces.
