I have already baked many different cottage cheesecakes, with various fillings.

I also tried semolina muffins many times, but I caught myself thinking that I had never baked muffins that combined cottage cheese and semolina. Or maybe I baked them once, but I forgot, I’ve made so many of these cupcakes that I can’t count them! In general, I decided to try it and selected the desired composition, and also came up with my own proportions. I was very pleased with the result, the cupcakes turned out very soft and tender - a complete pleasure! I am pleased to share my result with you.

Ингредиенты

Cottage cheese 9% - 300 g

Semolina - 130 g

Sugar - 150 g

Eggs - 3 pcs.

Sour cream - 100 g

Butter - 60 g

Baking powder - 2 tsp.

Vanillin - 2 g

Рецепт

1. Place cottage cheese in a bowl, add sugar and vanillin.

2. Mash the cottage cheese with a fork, mixing with sugar and vanilla, then break the eggs into the mixture.

3. Using an immersion blender, beat the mass well.

4. Next add sour cream and cooled melted butter.

5. Add semolina and baking powder to the mixture, mix and leave for 15 minutes.

6. The dough will be medium thick and pourable.

7. Place the dough into muffin tins. I really like baking in silicone molds, nothing ever sticks and the cupcakes just jump out of them. You can fill almost to the top, since the cupcakes will not grow much in the oven.

8. Preheat the oven to 180 degrees and bake the cupcakes for 30-35 minutes. Check the readiness of the curd muffins with semolina with a dry toothpick; there should be no traces left on it.

9. Sprinkle the cupcakes with powdered sugar and serve immediately with tea. The cupcakes turned out fluffy and fragrant! I am delighted!
