Pumpkin soup with shrimp

A soup that is worthy of a holiday table, it is for holiday tables during the pumpkin ripening period that I prepare this soup. How delicious it is!

Pumpkin soup with shrimp is very aromatic, creamy, healthy, and filling, too. Preparing pumpkin soup with shrimp is also easy. You can cook it without carrots, but I once added them to the soup when the pumpkin was not quite a beautiful color, but it turned out that the carrots added not only color to the soup, but also taste!

Pumpkin - 500 g
Water - 250 ml
Carrots - 70 g
Garlic - 1 clove (or dried garlic powder - 0.5 tsp)
Shrimp - 300 g
Olive oil - 1 tbsp.
Cream - 150 ml
Pumpkin seeds - 1 tbsp.
Parmesan - 2 tbsp.
Salt and pepper - to taste

1. Peel the pumpkin from peel, seeds and fibers. Cut the pumpkin pulp into small cubes.
2. Transfer the pumpkin to the pan. Add water.
3. Peel the carrots, wash them and cut them into slices.
4. Add the carrots to the pumpkin in the pan. Salt and pepper the vegetables. Place the pan on the fire and cook the vegetables until fully cooked, 25-30 minutes.
5. Check the readiness of the vegetables by piercing them with a knife or fork. Well-cooked pumpkin begins to turn into puree.
6. While the vegetables are cooking, let's start with the shrimp. We clean the shrimp from heads and shells, and remove the intestinal wreath on the tail. I use two types of shrimp. I will add small shrimp directly to the soup, and leave large ones for serving the soup at the holiday table, we are preparing a holiday soup!
7. Heat olive oil in a frying pan and either fry fresh garlic cut into slices until golden brown and remove it from the pan, or, as I did, add ground garlic.
8. Add shrimp to the garlic oil and cook them in a frying pan for 5-7 minutes, they should become reddish in color and opaque.
9. Remove the pan with vegetables from the heat. Using a blender, puree the prepared pumpkin and carrots. You can make mashed potatoes using a potato masher.
10. This is the consistency of our soup. If you want the soup thinner, add a little boiling water to it.
11. At the very end, add cream.
12. Also, using a blender, mix all the ingredients of the soup. Return the pan of soup to the stove and cook for another 5-7 minutes. The soup should be warm but not boiling. At the very end of cooking, add shrimp to the soup, setting aside a few for decoration.
13. Pour the finished pumpkin soup with shrimp into serving bowls. Decorate with shrimp, sprinkle with pumpkin seeds and finely grated Parmesan cheese.
