Belgian waffles are a soft type of waffle and the culinary pride of Belgium.
Other varieties of these waffles are also common in Belgium: Liege, Dutch. Belgian waffles gained particular popularity in the United States, where the Belgian confectioner Walter Clement first began preparing and selling them back in 1962.
The original recipe for Belgian or Brussels waffles was made from yeast dough with beaten egg whites, which made the final product incredibly fluffy. Over time, the classic recipe was simplified, and the yeast was replaced with baking powder.
Belgian cuisine has become famous for its beer, chocolate and waffles. The most famous waffles are Liege waffles, with pearl sugar added to the dough, and Brussels waffles, which are lighter and airier. I don’t have pearl sugar yet, so today we’ll prepare the second version of Belgian waffles.
We will need an electric waffle iron with plates for making thick waffles. If you plan to serve the waffles with something very sweet like honey or syrup, reduce the amount of sugar in the recipe.

Flour - 170 g
Milk - 170 ml
Chicken egg - 2 pcs.
Butter - 60 g
Sugar - 1/2 cup
Baking powder - 1 tsp.
Vanilla - on the tip of a knife
Salt - a pinch

1. Separate the whites from the yolks. Grind the yolks with sugar and vanilla until white using a mixer.
2. Add flour and pour in milk in a thin stream while continuously whisking.
3. Then add melted butter.
4. Beat the whites with a pinch of salt into a strong foam.
5. Gently fold the whites into the dough. The consistency of the dough should be like pancakes.
6. Place approximately 2 tablespoons of batter per waffle in a preheated waffle iron. I put the dough in the center and don’t level it, because if you don’t calculate the right amount and level the dough well, then if there is not enough of it, the waffles on top will not bake well and you won’t get beautiful cells. Bake for 4-6 minutes, depending on the power of the appliance, until golden brown.
7. Cool the finished waffles on a wire rack so that they do not become damp.
8. Serve "Belgian waffles" sprinkled with powdered sugar, honey or syrup, very tasty with a scoop of ice cream)
