If you want to treat yourself to something sweet and tasty, but you can’t decide on a recipe or you have very little time, make quick donuts. You won’t need much time for preparation and cooking; in 15-20 minutes there will be a plate of delicious donuts on the table. They turn out very tender, with a wonderful curd taste.

Wheat flour - 250 g

Baking powder - 1 tsp.

Sugar - 10 tbsp.

Salt - 1 tsp.

Cottage cheese - 400 g

Vanilla sugar - 1 tsp.

Chicken eggs - 2 pcs.

Vegetable oil - 500 ml

1. To make quick donuts, you can use both store-bought and homemade cottage cheese. In this recipe I use homemade cottage cheese, made from homemade milk with my own hands. The cottage cheese is of high quality and quite fatty, so there is no need for additional fat in the form of butter or sour cream.

2. Cottage cheese must be ground through a fine sieve or using a blender, thanks to this the donuts will acquire a more delicate structure. Add sugar and salt. Mix the whole mass well. Beat the eggs and vanilla separately. Combine the egg mass with the curd mixture. Mix flour with baking powder and sift twice. Introduce into cottage cheese in parts.

3. The dough should be soft and pliable.

4. Take a small portion from the total piece of dough and roll it into an even ball between the palms of both hands.

5. It shouldn’t be big, as it won’t be able to deep-fry, but you shouldn’t make it too small either – it will be dry.

6. When all the balls are ready (I got 24 of them), put a pan of oil on the fire.

7. It must be very hot before you put the donuts in it, otherwise they will absorb a lot of fat, and this will greatly affect the taste. When the oil is very hot, you need to put a small part of the donuts (4-5 pieces) into it and reduce the heat.

8. In the very first seconds, a crispy crust will form on them, which will not allow fat to penetrate inside. Remove the donuts when they get a nice golden brown color, this will take 2-3 minutes.

9. Place the finished donuts on a napkin to remove excess fat.

10. Place curd and tender, sweet and quick donuts on a dish, sprinkle with powdered sugar if desired.

11. The inside of the donuts is loose, with a very tender crumb.

12. Serve delicious donuts with a cup of tea, coffee or milk.
