We are preparing a traditional soup of Uzbek cuisine with lamb. Delicious and rich shurpa made from lamb, potatoes, chickpeas and vegetables.
Shurpa is a famous dish of Uzbek cuisine; not a single feast or even a wedding can do without it. It can be fried and boiled. I want to introduce you to a more dietary, boiled shurpa, which is common in Uzbekistan. For shurpa, lamb is usually used - this is a classic, but it can also be prepared with beef. There simply cannot be any other options, this is a Muslim dish)). A distinctive feature of shurpa from other soups is the richness of the broth during long simmering, large cutting of vegetables and, of course, the use of Uzbek seasonings. Chickpeas are often added to shurpa, but it can be prepared without them. Such soup will even raise the dead, heal the sick, and feed the hungry.
Ингредиенты
Lamb meat - 500 g (preferably with bones);
Potatoes - 4 pcs.
Carrots - 2 pcs.
Bell pepper - 2 pcs.
Hot chili pepper - 2-3 pcs
Onions - 1-2 pcs.
Chickpeas - 300 g (already soaked)
Garlic - 3 cloves
Zira - 1 tsp
Coriander - 0.5 tsp
Ground red pepper - to taste
Tomato - 2 pcs.
Рецепт
1. Wash the meat and add cold water, put on fire and cook for 15 minutes.
2. Then add the soaked and swollen chickpeas, whole chili pepper and cook with the meat for more than an hour.
3. Then add the onion, cut into thin half rings, and salt well. Cook for another hour until the meat is cooked and soft.
4. Cut the carrots into large rings and add to the soup half an hour before readiness along with the potatoes.
5. Cut the potatoes into halves or quarters if they are large.
6. Cut bell pepper into large pieces. Add it 20 minutes before it is ready.
7. Cook for another 20 minutes.
8. Cut the tomatoes into small cubes, peel and crush the garlic.
9. Add tomatoes and garlic five minutes before readiness. Add cumin and other spices. Chop the greens and put part of it in the soup, add the rest to the plates when serving.
10. Pour the finished shurpa into the tills, add the meat and sprinkle with fresh herbs. Serve with fresh flatbreads.
