Traditional Spanish omelette with potatoes “tortilla de patatas” is a popular and beloved dish all over the world. Hearty, tasty, simple and quick to prepare, it is equally good as a nutritious breakfast or as a quick lunch or dinner for the whole family, and can be served either hot or chilled.
You can cook an omelette in a frying pan or in the oven, and as a filling, in addition to traditional potatoes, you can add almost anything you can find in the refrigerator or freezer. Today I propose to prepare an oven-baked Spanish omelette with potatoes, bell peppers, onions, cheese and sausage. Shall we begin?!

Chicken egg – 8 pcs.
Potatoes – 500 g
Sour cream – 200-250 g
Sausage – 200 g
Cheese – 150 g
Sweet pepper – 1-2 pcs. (optional)
Onions – 1 pc.
Garlic – 3 cloves
Vegetable oil – 1-2 tbsp. (of necessity)
Salt - to taste
Ground black pepper - to taste
Рецепт
1. Peel and cut the potatoes into slices approximately 0.5 centimeters thick.
2. Place potatoes in a saucepan. Fill with cold water, add 1-2 pinches of salt, bring to a boil and cook for 5-7 minutes until half cooked.
3. Grate the cheese. Cut the sausage, bell peppers, onions and garlic cloves into small pieces.
4. Fry the pieces of sweet pepper, onion and garlic over high heat for 5-7 minutes until half cooked.
5. Combine potatoes, mixed roasted vegetables and sausage. Add a little pepper and salt and mix everything carefully.
6. Place the filling in a greased pan (I use a 28 cm diameter pan).
7. Combine sour cream and eggs. Add about half the cheese and 2-3 pinches of salt and pepper. Mix everything thoroughly.
8. Pour the mixture into the filling mold.
9. Sprinkle everything with the remaining cheese.
10. Place the omelette in an oven preheated to 180 degrees and bake for 30-40 minutes.
