Risotto with wild mushrooms

Anyone who loves risotto has probably tried a lot of recipes, I cook it with different fillings, today I want to share a recipe for risotto with mushrooms. Which mushrooms to use is up to you, I prefer to use chanterelles in this recipe, they go very well with rice, I also like them with honey mushrooms - the aroma is crazy.
I always have a supply of wild mushrooms in the freezer, all thanks to my husband, he does not miss the opportunity to go into the forest for them during the season. If you don’t have such mushrooms, it doesn’t matter; now you can buy any mushrooms in supermarkets, fresh or frozen.
So, let's prepare all the necessary products and start preparing risotto with wild mushrooms (frozen chanterelles).

Short grain rice - 1 cup
Boiled-frozen chanterelle mushrooms - 200 g
Parmesan cheese - 60 g
Olive oil - 3 tbsp.
Garlic - 1 clove
Onions - 1/2 pcs.
Mushroom broth - 2 cups
Salt - to taste

1. First, heat a frying pan with olive oil, peel and crush a clove of garlic with the flat side of a knife, put it in the frying pan and fry until golden brown, then throw it away - it has given up its aroma to the oil and we won’t need it anymore.
2. Place finely chopped onion in a frying pan with aromatic garlic oil and fry until lightly browned.
3. Rinse the rice first, if necessary, and add it to the pan, heat, stirring, for about a minute over medium heat.
4. Pour in a small portion of mushroom broth, stirring and heating over moderate heat. As soon as the liquid is absorbed, pour in a little more, and continue until all the liquid is absorbed.
5. Add the mushrooms, stirring over medium heat for about 7 minutes. If the rice becomes too dry, add a little more liquid.
6. Add salt, add grated Parmesan, stir.
7. Delicious, aromatic risotto with frozen chanterelles is ready.
