Chocolate cauliflower mousse

I don’t even like the word “diet” itself, but sometimes the realization that you are eating healthy and indecently low-calorie food pleasantly warms your soul.
When I want to enjoy a delicious dessert without harming my figure, I prepare a light chocolate cauliflower mousse. Perhaps at first the idea of cooking a sweet dish from cabbage will seem unusual, or even wild, but once you try this light and illuminating dessert, you will change your mind.
The neutral taste and delicate creamy texture of cauliflower puree in the finished mousse are more reminiscent of a baked apple. And if you add a little fragrant honey, spicy spices and cocoa to it, the taste of this incredibly light and refreshing dessert will delight any sweet tooth. Try it!
Ингредиенты
Cauliflower - 1 kg
Cocoa powder - to taste
Gelatin - 25 g (agar-agar - according to instructions)
Honey/sweetener/sugar - to taste
Spices - to taste
Additionally on request:
Chocolate - 1-2 pinches (for decoration)
Fruits - for decoration

1. Wash the cauliflower and separate it into small florets.
2. Steam the inflorescences until soft. I cook cabbage in a slow cooker in the “steamer” mode for 15 minutes.
3. Grind the inflorescences to a smooth puree.
4. Prepare gelatin (or agar-agar for a vegetarian version of the dish) according to the instructions on the package. I use instant gelatin, which I dissolve in 2-3 tbsp. hot water.
5. Add prepared gelatin, cocoa powder and sweetener to taste to the chopped cabbage.
6. Beat all ingredients well again, 2-3 minutes. Add spices to taste. Don’t skimp on the seasonings; when cooled, cabbage has a completely neutral taste and aroma and essentially only gives volume, while the main taste comes from cocoa, spices and fragrant honey (if used). I add the same spices that I use when making fruit mousses - vanilla, cinnamon and rum essence (a few drops for aroma).
7. Divide the mousse into portion forms and place in the refrigerator to cool. As soon as the mousse hardens, the dessert is ready. Typically, the cooling process takes from 1.5 to 3 hours. To speed up this process, place the mousse at room temperature in the freezer for the first 20-30 minutes, and then put it in the refrigerator for final cooling.
8. Decorate the finished mousse according to your mood. I like to add a few pinches of white or dark chocolate and fresh berries.
9. Chocolate cauliflower mousse is ready!
10. The finished mousse both in aroma and taste resembles apple sambuca. Light, refreshing, with the aroma of spicy spices. Try it!
