3. Then, continuing to wield a thin sharp knife, remove all the meat from the bone. You should not throw away the bone frame, it will make an excellent broth, however, for a different dish.

4. Cut all the meat into thin strips.

5. Add salt, ground black pepper and, if desired, add nitrite salt.

6. Knead the meat for 15 minutes. It will change color a little and become viscous.

7. In order for the ham to be as dense as possible, you need to chop the meat a little with a blender. Then mix everything again.

8. Cover the ham dish with a food bag and put the prepared meat into it, while pressing the spoon to the bottom and walls, releasing air to the maximum.

9. Close the lid and tighten the springs one by one.

10. Put the ham in the multicooker bowl with cold water. It must be completely covered with water.

11. Turn on the "Soup" function for 1.5 hours.

12. After the signal, remove the ham and immediately lower it into cold water for 1-2 minutes. Then send to the refrigerator until completely cooled.

13. Remove from the ham, cut and serve.
