Light, tender, juicy frittata with seasonal vegetables is a simple, unpretentious dish that will help out at any time of the year. Today I propose to pay tribute to the autumn that has come into its own and cook a fragrant colorful frittata with sweet peppers, zucchini, onions and cherry tomatoes. Based on the cooking process described in the recipe, you can cook vegetable frittata with a wide variety of fillings from fresh or frozen vegetables. Sweet pepper - 2 pcs.
Onion - 1 pc.
Zucchini - 0.5 pcs.
Vegetable oil - 2 tbsp.
Water - 1 tbsp.
Salt - to taste
Ground black pepper - to taste
Cherry tomatoes - 1 handful
Cheese - 4-5 tbsp.
Chicken egg - 6-7 pcs.
Greens - 2 pinches (optional)

1. To make frittata with vegetables, you will need the ingredients listed.
2. Prepare the filling. Cut the sweet pepper, zucchini and onion into small pieces. Cut cherry tomatoes in half. Grate cheese on a fine grater.
3. Heat up vegetable oil. Add prepared vegetables, some ground black pepper and salt.
4. Mix everything well. Add 1 tbsp. cold water, cover the pan with a lid, and stirring occasionally, fry the vegetables over medium heat for 12-15 minutes, until tender
5. In a separate container, combine 6-7 eggs. Add 1-2 pinches of salt, ground black pepper and 2-3 tbsp. grated cheese. Mix the components until a homogeneous mass is obtained. It is not necessary to purposefully beat the mixture, it is enough that the proteins and yolks are combined.
6. Add egg mixture to vegetables. Cover the pan with a lid and cook the dish for another 7-10 minutes, until the mixture thickens slightly.
7. Then add the prepared cherry tomatoes and a few pinches of cheese.
8. Place the pan in the top third of the oven, preheated to 180 degrees and bake for 10-15 minutes, until golden brown.
