Risotto is a fairly famous dish of Italian cuisine. Its delicate, creamy consistency, wine aroma and creamy taste have won many fans around the world. Today we are preparing risotto with chicken.

Butter - 125 g
Chicken fillet (cut into thin strips) - 900 g
Onion (finely chopped) - 1 pc.
Arborio rice - 500 g
Dry white wine - 150 g
Saffron stigmas - 1 tsp.
Chicken broth - 1.4 L (5 1/2 cups)
Salt and ground black pepper to taste
Parmesan cheese (finely grated) - 60 g

1. Melt 55 g of butter in a deep, thick-walled saucepan, add onion and chicken fillet to the melted butter, fry, stirring, for about 8 minutes. Add rice and mix well. Cook, stirring, 2-3 minutes. Pour wine into the pan and cook for another 1 minute.
2. Mix saffron stigmas with 4 tablespoons of hot broth. Add this mixture to the rice and cook until the liquid has completely evaporated. Then the broth should be added one ladle at a time, each previous portion should be completely evaporated, and the risotto should be constantly stirred during the cooking process. Everything should take about 20 minutes (the risotto should have a creamy texture). Add salt and pepper, mix well.
3. Remove the pan with risotto from the stove, add the remaining oil, stir. Serve the risotto on serving plates, sprinkled with Parmesan cheese.
