In combination with cottage cheese, eggs and chocolate, rice flour is in no way inferior to wheat flour. The main thing is the right recipe (mine, for example) and high aspirations. Therefore, away with sadness and let's start preparing curd and rice muffins with chocolate filling...

Eggs - 2 pcs.
Rice flour - 150 g (almost a glass)
Butter - 50 g
Sugar - 75 g
Vanilla sugar - 1 tsp.
Baking powder - 1 tsp.
Cottage cheese - 200 g
Chocolate - 30 g

1. First of all, combine the eggs with sugar and vanilla sugar and beat with a mixer into a fluffy mass.
2. Add cottage cheese and soft butter. Stir the mixture well with a spatula.
3. Sift rice flour and baking powder through a sieve.
4. Stir the dough with a silicone spatula (or something similar).
5. Fill the silicone muffin tin halfway with dough. Put chopped chocolate and put a little more dough on top. So we fill out all the forms. Bake in the oven for 25-30 minutes at 200°C (depend on your oven).
6. Curd muffins with rice flour are ready! It turned out very tasty!
