Paella with chicken and shrimp

This is a classic Spanish dish whose name would be more correctly pronounced "paeya". The main ingredient of paella is rice.

Instead of the saffron, cayenne pepper and paprika required separately in the recipe, you can use a ready-made paella spice mixture. The combination of meat and fish or chicken and shrimp is traditional in Spain. If you don't like it, just make chicken paella or shrimp paella, increasing the quantity accordingly. Ингредиенты

Chicken thighs (without skin) - 8 pcs.

Vegetable broth (decoction), hot - 6 cups

Olive oil - 2 tbsp. l.

Sweet pepper, red, peeled and cut into strips - 4 pcs.

Raw shrimp, peeled - 700 g

Black pepper, ground

Canned tomatoes (pieces) - 800 g

Medium grain rice for paella or basmati - 450 g

Green beans - 400 g

Saffron - several threads

Perey cayenne - a pinch

Paprika - a pinch

Parsley, chopped - zhmenka

1.Pour 2 cups of vegetable broth over the chicken thighs in a saucepan, cover and simmer over moderate heat for 15-20 minutes. Remove chicken with a slotted spoon.

2.Heat the oil in a paella pan (or large flat frying pan). Fry the bell peppers for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring constantly, for 2 minutes until the shrimp are cooked through. Remove the peppers and shrimp from the pan with a slotted spoon.

3.Add the tomato pulp, rice and the remaining cooking liquid from the chicken thighs to the pan. Season with salt and pepper, pour in another 2 cups of broth and add the chicken. Cook over low heat for 20-30 minutes (add a little more hot broth if necessary). 10 minutes before the end of cooking, add the beans, saffron, cayenne pepper and paprika. Place bell peppers and shrimp in a frying pan and heat everything through. Paella with chicken and shrimp is ready, sprinkle it with parsley and serve the paella to the table. Bon appetit!
