A simple recipe for a very tasty Italian dish. Gnocchi, at its core, are lazy potato dumplings.
Gnocchi is one of the classic dishes of traditional Italian cuisine. The taste and consistency of gnocchi is very unique and is somewhat similar to pasta, somewhat to Russian dumplings, and somewhat to lazy potato dumplings. Even just dressed with olive oil or sauce, they are very tasty.

1. How to prepare potato gnocchi: bake or boil 500 grams of potatoes in their skins. Clean without cooling.
2. Mash the potatoes into mashed potatoes.
3. Add one level teaspoon of salt to the potatoes and knead the dough, gradually adding approximately 150 grams of flour.
4. You need to add just enough flour so that you can work with the dough, while trying to knead the dough as little as possible.
5. Divide the resulting dough into four parts, rolling each part into a rope approximately two centimeters thick.
6. Cut the gnocchi approximately two centimeters wide.
7. In principle, gnocchi can already be cooked and eaten, but in order for the sauce to stick to them better, you need to make incisions with a fork.
8. Gnocchi can be frozen or boiled fresh. Place the gnocchi in boiling water and cook in plenty of salted boiling water until it floats.
9. In Italy they often prepare it this way: put boiled gnocchi in a frying pan with melted butter and lightly fry.
10. Sprinkle with grated hard cheese.
11. Add chopped fresh parsley.
12. Immediately remove from the heat and serve the potato gnocchi to the table. In Italy this dish is called gnocchi piemontese, and in Russian - Piedmontese niocchi.
