I offer another option for snack profiteroles - with sprat salad. They are easy to prepare, you just need to follow the basic rules when baking profiteroles: do not open the oven for the first 20 minutes, then lower the temperature, and after turning off the heat, keep the profiteroles in the oven for another 5-10 minutes without opening the door. To bake profiteroles, we take all the necessary products.
Ингредиенты
Water - 200 ml
Oil - 80 g
Salt - a pinch
Flour - 100 g
Eggs (63 g) - 3 pcs.
Filling:
Sprats - 1 jar
Eggs - 2 pcs.
Pickled cucumbers - 2 pcs.
Corn - 0.5 cans
Mayonnaise - 2 tbsp.
Рецепт
1. Pour water into a saucepan, add a pinch of salt and oil. Bring to a boil and wait until the oil and salt are completely dissolved.
2. Immediately add flour to boiling water and, stirring quickly, form a ball of dough. The dough should not stick to the walls of the dish. Remove the saucepan from the heat.
3. Continue stirring the dough until it cools slightly. Then beat the three eggs into the dough one at a time, stirring the dough until smooth after adding each one.
4. Place the resulting dough into a pastry bag fitted with a wide round or star tip.
5. Place the profiteroles on a baking sheet lined with parchment. There is no need to grease the parchment. Bake profiteroles in an oven preheated to 180 degrees. Do not open the oven door for the first 20 minutes so that the profiteroles do not settle. Then reduce the temperature to 160 and dry them for another 10 minutes. After turning off the oven, keep the profiteroles inside for another 5-7 minutes.
6. Remove the baking sheet from the oven and cool the products completely.
7. While the profiteroles are cooling, prepare the filling. We will need the following products.
8. Free the sprats from oil. I still bother and cut off their tails and take out their vertebrae. Then chop the sprats with a fork.
9. Chop boiled eggs, pickled cucumbers, combine everything with canned corn and sprats. Grease with mayonnaise. Corn is an excellent substitute for green peas.
10. Stuff the profiteroles with sprat salad, cutting off the lid or cutting them in half. Serve to the festive table.
