Instant pickled beets

A delicious snack for the table.

A savory appetizer of baked beets with garlic and herbs, in a sweet and sour marinade based on olive oil, dark vinegar and honey. Grab the ingredients to make quick pickled beets.

Ингредиенты

Beetroot - 600 g

Salt - to taste

Ground black pepper - to taste

Parsley - 10 g

Olive oil - 1-1.5 tbsp. (for baking)

Marinade:

Olive oil - 2 tbsp.

Garlic - 2-3 cloves

Honey - 1 tsp. (25 g)

Balsamic cream/red wine vinegar - 1 tbsp.

Рецепт

1. Peel the beets and cut into slices with a base of approximately 1.5 cm or half rings 1 cm thick.

2. Line a baking tray with baking paper. Lay the beet slices in one layer (you can slightly overlap them), sprinkle with olive oil and place in an oven preheated to 200 degrees for 20-25 minutes.

3. Then turn the pieces over and bake for another 20-25 minutes, until done.

4. Peel and finely chop the garlic cloves. Combine and thoroughly mix the marinade components: 2 tbsp. olive oil, honey, garlic and vinegar. I used balsamic cream, but black rice, balsamic, red wine, or apple cider vinegar would also work.

5. Finely chop the parsley. Place hot roasted beet slices in a salad bowl. Add parsley and prepared marinade.

6. Mix everything well. Taste the dish and season to taste with salt and ground black pepper.

7. Beets marinated according to this recipe can be served within 15-30 minutes, or cooled to room temperature, covered with cling film and refrigerated for 12-24 hours.

8. The longer the marinating process, the more time the pieces are saturated with marinade, but you can appreciate the piquant, spicy taste of the snack both warm and chilled.

9. Instant pickled beets are ready. Sprinkle the dish with a pinch of fresh herbs and serve.
