Salad “Fox coat”

We are preparing herring under a fox coat with mushrooms for the festive table.
The salad has an unusual combination of ingredients - fried mushrooms and salted herring. If you haven’t tried salads with this combination before, prepare this dish, it’s very tasty. The salad can be laid out in layers or the ingredients can be mixed together. But the top of the salad must be carrots; it can be either boiled or fried. Either way it will turn out delicious. It is the carrot that represents the likeness of a forest animal.
Ингредиенты
Lightly salted herring – 200 g
Champignons – 350 g
Onion – 1 pc.
Carrots – 1 pc.
Potatoes – 2 pcs.
Eggs – 4 pcs.
Mayonnaise – 50 g
Vegetable oil – 2 tbsp.
Salt, pepper - to taste
Рецепт
1. Peel the onion, chop into cubes, fry in oil until translucent, about 3 minutes.
2. Wash the mushrooms, cut into medium-sized pieces, add to the onion, fry together for another 5 minutes until the mushroom juice has completely evaporated. Lightly salt the mixture and cool after frying.
3. Boil the potatoes in their skins until tender, cool, and cut into small cubes.
4. Hard-boil the eggs, cool, peel, and chop them in the same way as potatoes.
5. Separate the herring from the film and bones. Also cut the herring fillet into cubes.
6. Mix all prepared ingredients in one container.
7. Season them with mayonnaise, sprinkle with salt to taste, mix thoroughly.
8. Grate the carrots on a coarse grater and place them on the oily surface of the frying pan. Sauté carrots in oil until soft, about 5 minutes, without frying. Keep the heat to low so the carrots don't burn.
9. Cool the carrots completely, squeeze them from the oil, place them on top of the salad, distributing them evenly around the entire perimeter. Salad “Fox coat” with herring and mushrooms is ready.
10. Garnish with herbs and serve. Bon appetit!
