Lenten soup kharcho

Georgian kharcho in meat broth is often prepared without carrots and potatoes; in the Lenten version, I suggest including root vegetables. But don’t forget the obligatory tkemali sauce, walnuts, white rice, coriander + cilantro, otherwise we won’t get the characteristic aroma and richness of the kharcho.
Ингредиенты
Potatoes - 4-5 pcs.
Rice - 100 g
Tkemali sauce - 100 g
Carrots - 1 pc.
Onion - 1 pc.
Walnuts - 50 g
Garlic - 1/2 pcs.
Cilantro - 1 bunch
Tomato paste - 30 g
Chili pepper - 1/2 pcs.
Olive oil - 30 ml
Salt, pepper, coriander, bay leaf - to taste
Рецепт
1. Dry the walnut kernels in a frying pan or in the oven. Before cooking the rice in the soup, soak it in cold water for half an hour (it will soften faster)
2. Wash, peel, and cut vegetables (potatoes, carrots, onions) in a convenient way.
3. Place in boiling water, add olive oil, throw in a bay leaf and cook without salt for 10-15 minutes.
4. Drop in a portion of the swollen rice. Continue cooking with active bubbling for the next 5-7 minutes.
5. Season the lean kharcho soup with rich tkemali sauce, color with tomato paste, and boil. Taste and add salt to taste.
6. Grind nuts, coriander, garlic, pepper, add the mixture to the kharcho soup immediately, or pour it into plates. Don't forget about fresh cilantro.
