A simple, but at the same time original recipe for cooking mackerel on the grill. We will prepare mackerel fish kebab from whole fish.

To cook mackerel on the grill, you don’t need any special marinating, but adding an interesting or spicy note is a good idea. Most often, people prefer to marinate mackerel for barbecue dry - in some spices, because... using liquid marinades (especially those with vinegar or wine) can destroy the structure of the fish, making it watery and falling apart.

More often I cook mackerel on the grill with lemon and fresh herbs. In addition to this favorite option, the combination of mackerel with apple and curry is also highly approved! Long marinating is not required, almost 15-20 minutes is enough.

The easiest way is to fry the whole mackerel in a grill, which makes it especially juicy, but you can also do it in pieces.

To prepare mackerel kebab on the grill, prepare the ingredients according to the list.

Ингредиенты

Mackerel - 2 pcs.

Apple - 0.5-1 pcs.

Curry - 1-2 tsp.

Lemon juice - 1 tsp.

Salt - to taste (up to 0.5 tsp)

1. Mackerel is usually sold frozen, and before cooking it must be thawed by transferring it from the freezer to the refrigerator in advance. Cut the apple into slices or wedges, sprinkle them with lemon juice and rub with curry. This composition will be the marinade for the fish.

2. Prepare the mackerel: wash, cut off the head, gut the insides and wash again. Rub the outside of the mackerel with a little curry, lightly salt it if desired, and place slices of aromatic apples inside. If you plan to baste the mackerel with soy sauce when serving, you don’t need to salt it at this stage. Leave to marinate for 20 minutes.

3. Grease the grill with vegetable oil and fix the mackerel stuffed with apples in it. Along with the fish, I wanted to bake a couple of onion quarters. More precisely, the onion will turn out to be simply browned and not softly baked.

4. Fry the mackerel over hot coals on each side for a maximum of 10 minutes, turning often. For small specimens, even five minutes may be enough.

5. Don't overdry.

6. The mackerel on the grill over the coals should be juicy and aromatic.

7. Serve the mackerel kebab baked on the grill immediately; if desired, serve with lemon slices. A baked apple is not only a marinade, but also a light, spicy garnish for fish.
