Surely each of you is familiar with such a snack as carrots in Korean?! Do you know?! Do you love it?! Then you should definitely get acquainted with its twin brother - Korean-style potatoes, better known as Kamdicha potato salad.
Korean potato salad "Kamdicha" is a fragrant and very tasty appetizer that can be easily prepared at home. A minimum of ingredients, a few minutes of preparation and an excellent result - juicy, slightly crispy potatoes, seasoned with aromatic spices. Simple, but delicious food without all the hassle! So, let's figure out how to make Kamdicha potato salad in Korean! Shall we begin?!

Potatoes – 0.5 kg
Garlic 1-2 cloves
Onion – 200 g
Vegetable oil - 3-4 tbsp.
Salt - to taste
Black/red pepper - to taste
Ground coriander – 1 tsp. (+ - to taste)
Coriander peas – 1-2 pinches (optional)
Vinegar – 1 tbsp. (optional)
Greens - for serving (optional)

1. Grate the potatoes on a special grater or cut into thin strips.
2. Pour cold water over the potatoes and leave for 5-15 minutes to remove excess starch.
3. Meanwhile, cut the onion into thin half rings or quarters. Add the onion to a frying pan with heated vegetable oil, add salt and fry until golden brown (about 7-10 minutes). A few minutes before the onions are ready, I also add a few pinches of coriander seeds.
4. Drain the starchy water and place the potatoes in boiling salted water. Cook the potatoes for 3-4 minutes, stirring and tasting occasionally. The potatoes should not be completely cooked. Tender on the outside, it should still be slightly crispy on the inside. This way the thin potato strips will retain their shape while preparing the salad.
5. Drain the hot water and run cold water over the potatoes to stop the cooking process.
6. Add spices, garlic and fried onions to the potatoes along with the oil in which they were fried.
7. Stir the salad and add salt or more spices if necessary. If desired, add vinegar to taste (I add 1 tbsp).
