Worcestershire sauce (balsamic or soy) - 6 tsp.

1. Remove the meat from the refrigerator in advance so that it is at room temperature.
Slice the pork neck into steaks about two centimeters thick and pierce them with a fork in several places. There is no need to pound the steaks, and the holes from the fork promote better marinating and prevent the pieces from bending when frying.
2. Sprinkle the steaks with Worcestershire sauce (soy sauce or good quality balsamic vinegar are also good for this purpose.)
3. Grind the pepper or simply crush it, for example, with the bottom of a glass on a cutting board.
Rub pepper over meat. You can start cooking steaks right away, or you can also leave the meat to marinate for a while.
4. Lightly grease the surface of the baking sheet on which the steaks will be cooked with vegetable oil and place them tightly together.
I have these well-worn cast iron frying pans - they are ideal for such purposes! Salt the steaks just before cooking, but keep in mind that Worcestershire and other sauces are already salty! Place these prepared pieces of meat in the oven preheated in the “grill” mode in the upper part, i.e. higher towards the heating part. If there is no grill mode, then set the maximum temperature (usually about 300 degrees) and adjust the cooking time. Fry one side first, then flip and fry the other side. Remove any juices that come out so that the steaks are fried rather than boiled! The total cooking time on the grill mode is about 15 minutes. The pork needs to be completely cooked through!
5. Pork steaks baked in the oven are ready. Let them sit on a wooden surface for a few minutes, and then transfer them to serving plates.
6. Serve pork steaks fried in the oven with side dishes to taste. Vegetable side dishes are especially tasty: vinaigrettes, boiled or baked potatoes, stewed or grilled vegetables, etc. In the photo - eggplants.
