Sun-dried green tomatoes

Regular ripe tomatoes are dried quite often, and they are already on sale.
But green ones are practically never found. Nevertheless, this option is quite acceptable. I make them mixed with reds - it turns out especially impressive.
You can store such tomatoes in oil in a tightly closed jar in the refrigerator until spring, and if you seal it tightly, you can store it in normal room conditions.

Green tomatoes - 200 g
Italian herb mixture - 1 pinch (3 g)
Salt - 1 pinch (2 g)
Garlic - 2-3 cloves
Olive oil - 100 ml

1. Choose green tomatoes that are not completely white, and those that already have some transparency, wash them well and pat dry with a paper towel. I placed the two tomatoes on the far right on the plate to show that it is better not to take such tomatoes, they will have a solanine taste.
2. Next, cut the fruits in any way you like - these tomatoes do not yet have a very large seed chamber, so they are not as juicy as ripe ones. This will reduce our cooking time.
3. Place our tomatoes on a baking sheet lined with baking paper.
4. Powder the tomato slices well with dry aromatic herbs and add a couple of crushed cloves of garlic. Sprinkle a little oil. And put it in a heated oven. I first heat it to normal temperature (180-200 degrees), put in the tomatoes and open the door slightly, reducing the oven heat to 90-100 degrees.
5. This is how they should turn out, our heroes of the day! The aroma is amazing!
6. Place the tomatoes in a dry jar and add oil. If you want to store the product for a long time, it is better to bring the oil to a boil.
7. This is how beautiful it turns out, we also add garlic cloves - this aromatic oil is perfect for dressing salads after we eat the tomatoes.
8. Sun-dried green tomatoes are ready! They will be soaked in oil and will be ready to eat. Use them in salads, put them on toast and sandwiches, I especially love sun-dried tomatoes in combination with spicy cheeses such as Parmesan and Palermo.
