Zucchini rolls with carrots

A budget snack made from the most affordable vegetables. Fry the zucchini cut into slices in a frying pan, roll into rolls with the addition of a spicy carrot filling.
The appetizer can be served either warm or cold, it will be very tasty. Despite the fact that the dish is meatless, the rolls are very filling and nutritious. The recipe will come in handy for your post!

Zucchini - 300 g
Carrots - 80 g
Onions - 35 g
Garlic - 1-2 cloves
Mayonnaise - 45 g
Vegetable oil - 45 g
Salt, black pepper - to taste

1. Peel the onions and carrots. Grate the carrots on a medium or coarse grater, cut the onion into small cubes.
2. Heat a little oil in a frying pan and add vegetables. Fry the onions and carrots for 3-4 minutes, stirring. Then remove from heat and let the filling cool slightly.
3. Transfer the carrot mass into a suitable bowl, add mayonnaise, spices and squeeze the garlic through a press. Add garlic to taste - the more, the spicier the filling will be. Garlic goes well with zucchini and perfectly complements the sweetish carrots. Mix the filling thoroughly, set it aside for now and work on the zucchini.
4. Rinse the zucchini, cut off the tails and cut into thin slices. Salt and pepper to taste.
5. Fry the zucchini in a frying pan with vegetable oil. Fry vegetables on both sides for 2-3 minutes.
6. Place the fried zucchini slices on paper towels to remove excess oil. Let the zucchini cool slightly. Then place about 1 tsp on one edge of the plate. carrot filling and roll the zucchini into a roll. In this way, roll up all the plates.
