Risotto with pesto and shrimp

Risotto is a delicious dish of Italian cuisine. As a rule, it is prepared from starchy rice, for example the Arborio variety.

Ингредиенты

Short grain rice - 100 g

Vegetable broth - 400 ml

Dry white wine - 50 ml

Shrimp - 10 pcs.

Butter - 1 tsp.

Olive oil - 1 tbsp.

Garlic - 1 clove

Onion - 1/3 pcs.

Cream - 50 ml

Parmesan - 2 tbsp.

Pesto sauce - 1 tbsp.

Salt - to taste

Рецепт

1. First, heat a frying pan with olive oil and butter. Crush a clove of garlic and place in a frying pan, fry and remove. Garlic is only needed to flavor the oil.

2. Then add the onion chopped into small pieces and fry it until soft. Add rice and lightly fry, stirring, over medium heat.

3. Pour in the wine and heat until the liquid is absorbed.

4. Then pour the warm broth into 3 primas: add the broth as soon as the rice has absorbed the liquid.

5. After the last addition of broth, immediately add pesto and stir.

6. Add shrimp.

7. Pour in the cream and sprinkle with Parmesan, heat, stirring, for about 1 minute and immediately place in a serving plate.
