The binding components of apple chips are egg, flour and semolina. We use granulated sugar as a sweetener, but if desired, you can replace it with honey or serve honey with a ready-made dish. The highlight of this recipe will be the addition of cinnamon; this spice goes perfectly with apples in any dish; it gives the potato pancakes an amazing aroma that spreads throughout the kitchen while frying the products.

Apple - 400 g

Chicken egg - 1 pc.

Semolina - 2 tbsp.

Wheat flour - 2 tbsp.

Sugar - 20 g

Ground cinnamon - 0.5 tsp.

Salt - 1 pinch

Vegetable oil - for frying

1. Rinse the apples, peel them, and completely remove the core. Grate the pulp on a coarse grater and squeeze out a little juice.

2. Place the apple chips in a deep container and beat in the egg.

3. Next, add the required amount of flour and semolina, mix thoroughly, and let stand for 5-10 minutes. During this time, the semolina will absorb some of the apple juice and swell slightly.

4. At the end, add granulated sugar, a pinch of salt and ground cinnamon, mix again. Sugar is added at the very end so that the apple chips do not have time to release a lot of juice.

5. Immediately start frying the potato pancakes. Place a frying pan over medium heat and heat a few tablespoons of oil. Place the resulting dough into the heated oil using a tablespoon. Form the potato pancakes into small sizes and not too thick so that they are evenly baked inside.

6. Fry them under a closed lid over medium heat. When one side of the workpieces acquires a crispy golden brown crust, turn them over to the other side and repeat the frying process.

7. Pat the pancakes with a paper napkin to remove the top layer of oil and serve. Apple pancakes with cinnamon are delicious both warm and cold.
