A tasty and soft curd cake with a beautiful inner cut will add variety to your family tea party.
This probably happens to many people: I saw a recipe and want to cook it immediately, without putting it on the back burner. That's my story with this cupcake! As soon as I saw the recipe, I immediately ran to cook, fortunately all the ingredients were in stock.
As a true lover of baking cupcakes, which you all have known for a long time, I was looking forward to the moment when I would cut it and see the middle. The inside of the cocoa looks like stretched strings, hence the name of the cupcake. Of course, the cake turns out very tasty and soft, it contains another of my favorites - cottage cheese! This cupcake will make your family tea party enjoyable and will definitely be appreciated by your family not only in appearance, but also in taste.
Prepare ingredients for the “Strings” curd cake. The butter should be removed from the refrigerator in advance so that it becomes soft.

Butter - 100 g
Sugar - 200 g
Vanillin - 1 g
Chicken egg - 3 pcs.
Cottage cheese (9%) - 200 g
Lemon zest - 1 tbsp.
Flour - 250 g
Baking powder - 10 g
Cocoa powder - 2 tbsp.
Cognac (optional) - 1 tbsp.
Salt - a pinch

1. Place soft butter in a deep bowl, add sugar, vanillin and beat thoroughly with a whisk.
2. Add eggs one at a time, beating after each.
3. Then add cottage cheese. There are two ways here. You can beat the cottage cheese separately in a blender, and then add it to the dough, or, if the cottage cheese is soft, add it directly to the dough, and then beat it all together.
4. I took the second path. After the dough has been beaten, add cognac and lemon zest.
5. Sift flour and baking powder into the dough, add salt, mix everything thoroughly.
6. The consistency of the dough is like thick sour cream.
7. Cover a rectangular baking dish with parchment, pour in a third of the dough and sprinkle one tablespoon of cocoa through a strainer.
8. Then pour another half of the remaining dough, sprinkle with a second spoon of cocoa and cover with the remaining dough.
9. Preheat the oven to 180 degrees and bake the “Strings” curd cake for 1 hour. Exactly 20 minutes from the moment you put the cake in the oven, you need to go over the surface of the cake with a sharp knife. Cool the finished cake, then sprinkle powdered sugar on top.
