Oriental salad with champignons and vegetables

I spotted this salad recipe on the Internet from a Dungan girl. I don’t think that this is some kind of national salad, just a fusion on the theme of the East.
Instead of champignons, shiitake mushrooms, fresh or dried, are perfect for this salad. They will give it a unique aroma and taste. In this case, the mushrooms must first be soaked for an hour and then boiled for half an hour. With champignons the taste becomes softer.
You can adjust the spiciness of the salad and its sourness, make it completely mild or spicy - “tear your eyes out”.

Champignons - 250 g
Tomatoes - 1 pc. (large)
Cucumbers - 1 piece (large)
Salad - 40 g
Cilantro - 10 g
Bell pepper - 1 pc.
Garlic - 3-4 cloves
Carrots - 1 pc.
Soy sauce - 1 tbsp.
Coriander - 1-1.5 tsp.
Ground red pepper - 1 tsp (or to taste)
Salt - to taste
Vegetable oil - 3-4 tbsp.
Lemon juice (vinegar) - 1 des.l.

1. Peel and cut the mushrooms: very fresh ones do not need to be peeled, just wipe with a dry cloth. If they are small, then leave them whole. Grate the carrots on a Korean grater, cut the tomatoes, cucumbers and peppers into square cubes.
2. Place the mushrooms in a preheated frying pan without oil, while the heat is medium. Wait for the moisture to release and evaporate it a little. Pour in soy sauce and add a clove of chopped garlic. Salt and add a little coriander, as the mushrooms absorb all the flavors very well at this stage. I didn't add any oil, but if necessary, add a little vegetable oil. Stirring, keep the mushrooms on the fire for a couple more minutes.
3. Add carrots to them and fry for another three minutes. It is necessary that the carrots wilt slightly, but remain al dente, and the mushrooms decrease in volume, but do not burn.
4. Rinse the lettuce and cilantro thoroughly in water. Tear the salad with your hands, chop the rest of the garlic (you can add more), chop the cilantro.
5. Place all prepared ingredients together with mushrooms in a salad bowl. Add garlic, coriander, red pepper, salt, lemon juice or vinegar.
6. Heat vegetable oil in a frying pan until smoking and immediately pour it over the garlic. Stir and serve; the salad with champignons and vegetables is delicious in an oriental way, even after standing.
