This summer I often had meringue roll as desserts, and I want to say that initially it seemed to me that this dessert was not simple, that it was difficult to make.
How to guess the desired degree of readiness of meringue? And this primarily depends on your taste preferences, I baked the meringue for a short time, about 15 minutes, and my roll was almost like a soufflé, that is, it was not even covered with a crust on top. Of course, such a roll is more difficult to roll, but it turns out incredibly tender, airy and simply melts in your mouth. As the baking time of the meringue increases, it develops a light crust on the surface, but the inside remains just as tender; this roll is easier to roll and no less tasty.
Meringue roll with raspberries is an excellent lifesaver when you are planning a celebration, but you don’t have any time to bake a cake, and you don’t want a store-bought one. You can bake this meringue roll by filling it with berries and decorating it on top. Believe me, your guests will appreciate your culinary skills.

For the roll:
Egg whites - 200 ml
Sugar - 200 g
Corn starch - 25 g
For cream:
Curd cheese - 200 g
Cream from 33% - 200 g
Powdered sugar - 40 g
Raspberries - 200-300 g

1. I separated the whites from the yolks in advance and weighed the required amount. Turn on the oven in advance and heat it to 150 degrees! Pour the whites into a bowl and begin to beat until foam appears.
2. As soon as the mass has increased slightly in volume, add half the sugar and continue beating.
3. Then add the rest of the sugar and beat until stiff peaks form.
4. Now add cornstarch and beat just until combined.
5. This is how stable the meringue mass will be, ready for baking.
6. Lay it out in an even layer on a baking sheet covered with a non-stick mat and place it in the oven (preheated to 150 degrees) for baking.
7. After 20-25 minutes, we take out our baking sheet, I bake until a light crust appears, which can be checked by touching it with your hand.
8. Cover the top of the finished meringue with another mat or parchment and turn it upside down on the table. Let it cool, and then carefully remove the mat on which the meringue was baked.
9. Now we make the cream, by the way, it can be made while your meringue is baking, the main thing is not to forget about it! Mix cream cheese and powdered sugar.
10. Take the heavily chilled cream out of the refrigerator and begin to whip it until creamy.
11. Now combine the cream and cheese mass, whipping with a mixer.
12. The cream is ready.
13. Spread the cream onto the cooled meringue, leaving a little for decoration. Place the raspberries evenly on one edge so that they are exactly in the middle of the roll.
14. Now, using the mat on which the meringue lies, roll it into a roll without touching the roll with your hands.
15. This is the kind of roll we should get.
16. Now decorate the edges of the roll with the remaining cream and decorate it on top with roses using pastry tips. We will also decorate with raspberries.
