Homemade liver pancake rolls are a delicious, moderately spicy appetizer dish for the holiday table. The appetizer is suitable for the male half with a strong drink. Making liver pancakes is a fascinating and moderately labor-intensive process. The liver dough turns out incredibly tender, and the pancakes themselves are the most aromatic.
Let's make pancakes from chilled chicken liver. As a filling we will use soft curd cheese with fried carrots, onions and garlic.

For the liver pancakes:
Chicken liver - 600 g
Milk - 1 glass
Chicken egg - 1-2 pcs.
Salt - to taste
Wheat flour - 3-4 tbsp.
For filling:
Carrots - to taste
Onion - 1 head
Sunflower oil - for frying
Garlic - to taste
Salt - to taste
Curd cheese (creamy) - to taste

1. Chilled chicken liver needs to be cranked in a meat grinder.
2. Break a chicken egg into liver mince.
3. Pour milk.
4. After this, the ingredients are mixed until smooth.
5. A little salt.
6. Add wheat flour to the minced meat and mix everything well again.
7. The liver dough turned out to be moderately thick.
8. Mix the dough with a mixer or blender. There should be no large lumps of liver.
9. Grease a well-heated frying pan with oil. Pour the liver dough onto the frying surface. The dough should be distributed in a thin layer in the shape of a pancake. Bake the pancake for 5 minutes over medium heat.
10. Turn over and bake on the other side for another 5 minutes. You can cover the pan during frying.
11. Place the finished chicken liver pancakes on top of each other and wait for the pancakes to cool.
12. We will use fried carrots and soft curd cheese as filling. First fry the carrots with onions and garlic in vegetable oil. Grease the surface of the liver pancake with curd cheese. Spread the roasted carrots on top.
13. Carefully roll the pancake into a roll. Cooled liver pancakes are very pliable to work with - they do not break or crack.
14. Place the blanks on a flat dish.
15. Liver pancake rolls are ready! Store for a short time under cling film to prevent it from airing. Serve the appetizer warm. If desired, decorate with fresh herbs.
