Dessert with curd cheese and cocktail cherries

I really love the Tiramisu dessert, but I always prepare the cream for it without using eggs.
This time I didn't have Mascarpone cheese and used regular, mild curd cheese. Instead of cocktail cherries, you can use frozen or fresh cherries, then you may have to increase the amount of sugar. I like the coffee component in the dessert, but for those who don’t like coffee, there is also an alternative - you can use the liquid from a cocktail cherry or its sweet juice.

Savoyardi cookies - 2 packs
Cream 35% - 300 ml
Curd cheese - 125 g
Cocktail cherries - 150 g
Instant coffee - 2 tsp.
Boiled water - 200 ml
Sugar - 2 tbsp.
Vanillin - 1 sachet

1. First, prepare the impregnation for Savoyardi biscuits. To do this, simply dilute instant coffee with warm water. I don't add sugar. The presence of liquor is always welcome, but I simply forgot about it. Instead of coffee at this stage, you can use cherry liqueur, compote, cherry juice or cherry cocktail liquid.
2. In a separate container, dilute the curd cheese with cream until creamy. In this form, it will be easier and easier to whip with cream, and the cream will be uniform and smooth.
3. Beat the cream together with sugar until lightly thickened. You need to try to immediately add the right amount of sugar so that you don’t have to add it later and there are no sugar grains left after whipping. Add diluted curd cheese to the half-whipped cream and beat everything until fluffy.
4. Quickly dip one side of the cookies into the coffee solution and place them in the mold with the wet side up. Lay out one row in this way.
5. Then a layer of buttercream.
6. Place cocktail cherries in any quantity on top of the cream and press them lightly.
7. Then another layer of cookies and cream. Smooth the surface of the dessert. You can sprinkle the top with sifted cocoa, chocolate or decorate as desired.
8. Dessert with curd cheese and cocktail cherries is ready. I have this decoration.
